Snow Crab :: Chionoecetes bairdi
|
Bairdi looks like Opilio and is hard to distinguish by the untrained eye. The
most noticeable difference is the presence of spines on the legs and claws. It
is caught in the waters of Alaska, Eastern Canada, Greenland and Russia. The
freezing methods are either Brine freezing or Blast freezing. Brine freezing
preserves the product for longer storage and better transportation. This
process does add saltiness to the flavor. Blast freezing keeps a more natural
flavor, but produces a brittle shell and increases the chance for broken
clusters.
