Snow Crab :: Deep Water (Chionoecetes japonicus)

Japonicus, also known as Deep Water Snow Crab, has a similar look
to Opilio and Baridi. The most noticeable difference is the longer thinner legs
and more opaque coloring. This crab is harvested primarily in Russian waters.
Brine freezing is the most common method for this type of crab. Brine freezing
preserves the product for longer storage and better transportation, but also
adds salt to the flavor. Blast freezing keeps a more natural flavor, but
produces a brittle shell and increases the chance for broken clusters.
